How long does your game keep frozen?
After the season, search a cut below for its freezer quality window, how to wrap it, and how to thaw it safely. These are quality guidelines from USDA FSIS home-storage guidance. Track what is actually in the chest freezer with the freezer tracker, and see the preserving game guide for the full workflow.
| Cut | Freezer (quality) | How to wrap | Safe thaw |
|---|---|---|---|
| Ground venison | 3-4 months | Package thin, press out air, double-wrap or vacuum seal | Fridge only, 1 lb per ~24 hrs - never on the counter |
| Venison steaks / chops | 8-12 months | Trim, double-wrap tight or vacuum seal, freeze fast | Fridge, 12-24 hrs; never at room temperature |
| Venison roasts / backstrap | 8-12 months | Wrap tight with no air pockets, or vacuum seal | Fridge, allow 4-7 hrs per pound |
| Wild boar / hog roasts | 4-12 months | Double-wrap or vacuum seal; trim silverskin | Fridge only |
| Wild boar / hog (ground) | 3-4 months | Package thin, press out air, wrap or vacuum seal | Fridge only |
| Elk / moose cuts | 8-12 months | Double-wrap or vacuum seal, freeze quickly | Fridge, hours-to-a-day by size |
| Bear (cook thoroughly) | 3-4 months | Wrap or vacuum seal; bear carries Trichinella, cook well | Fridge; cook to a safe internal temp |
| Fresh game sausage | 1-2 months | Wrap tight or vacuum seal; higher fat shortens it | Fridge only |
| Organ meats (liver, heart) | 3-4 months | Rinse, portion, wrap tight or vacuum seal | Fridge, use promptly once thawed |
| Upland birds, whole (pheasant, grouse, quail) | 6-12 months | Pluck or skin, dry, wrap tight or vacuum seal | Fridge only, allow a full day for larger birds |
| Upland birds, cut up | 6-9 months | Portion, wrap tight or vacuum seal | Fridge only |
| Waterfowl, whole (duck, goose) | 6 months | Pluck, dry, wrap tight; fatty skin shortens quality | Fridge only |
| Waterfowl, breasted out | 6 months | Wrap tight or vacuum seal the breasts | Fridge only |
| Wild turkey, whole | 12 months | Wrap tight or bag; keep at a steady 0 F | Fridge, allow ~24 hrs per 4-5 lb |
| Dove / small birds | 6 months | Wrap tight or vacuum seal; freeze fast | Fridge only |
| Wild rabbit / hare | 6-9 months | Portion, wrap tight or vacuum seal | Fridge only |
| Squirrel | 6-9 months | Portion, wrap tight or vacuum seal | Fridge only |
| Jerky (frozen for storage) | 6-12 months | Cool fully, bag airtight; freezing extends shelf life | Use from frozen or thaw in the bag |
| Cooked game (leftovers) | 2-6 months | Cool, portion, wrap airtight, label the date | Fridge, then reheat to a safe temperature |
| Smoked / cured game | 1-2 months | Wrap tight; cure and smoke do not replace freezing | Fridge only |
β οΈ Times assume a freezer held steadily at 0 F, meat frozen fresh and clean, and airtight packaging - a vacuum sealer roughly doubles the quality life over paper and plastic wrap. Always thaw game in the refrigerator, never on the counter, where the outside warms into the bacteria danger zone before the middle thaws. Bear and wild boar can carry Trichinella - cook them to a safe internal temperature regardless of freezing.
